Hey lovely readers! Some spare time on my hands has resulted in me experimenting and getting my hands dirty in the kitchen. I love it when I am able to really think about what I am having for my meals; your body is a temple so it's nice to put extra effort and thought into what goes in it.
Last week I made these mouthwatering spicy vegetable burgers that I really wanted to share with you. It is the most simplest recipe, everything you will need is going to be in your kitchen, and you get to impress the family/friends with restaurant quality food that you rustled up in your own little humble abode!

Ingredients
For the burgers
4 large potatoes (boiled)
150g of peas
1 chopped pepper
150g of sweetcorn
3 finely chopped green chillies (adjust to personal taste)
400g breadcrumbs
4 tsp salt (adjust to personal taste)
4 tsp black pepper (adjust to personal taste)
5 tsp red chilli flakes (adjust to personal taste)
2 tsp oregano (adjust to personal taste)
Oil
Burger baps
Salad
4 tomatoes
1 cucumber
1 red onion
Lettuce leaves
Time: 45 minutes
Makes: Around 12
Put on some good music that you can dance cook to.
Mash the potatoes once they have boiled thoroughly. If they are too firm and don't mash smoothly then add some milk to get it to the correct consistency.
Add the peas, sweetcorn, chopped green chillies and chopped pepper to the mashed potatoes.
Admire the beautiful range of bright colours.
Feel free to take a photo and upload it to your Instagram or Facebook (I chose both...).
Fold the mixture together.
Add 150g of the breadcrumbs to the mixture.
Work those arms of yours and get mixing.
Add the red chilli flakes, salt, black pepper and oregano.
Fold it into the mixture until it is evenly distributed.
Taste to see if the seasoning is lacking anything.
Make any adjustments that you need to.
Eat a bit more for the fun of it!
Place the remaining breadcrumbs in a plate.
Get a handful of the vegetable mixture (depending on how big you want your burgers to be) and make a patty.
Coat the veggie burger in breadcrumbs.
Repeat with the rest of the mixture.
This should make around 12 burgers.
Add oil in a non-stick pan and heat it up ready to shallow fry your burgers.
Place the burgers 2 at a time in the pan (depending on the size of your pan) and shallow fry them.
Wait till each side is golden brown and crisp before turning them over.
Repeat with the rest of the burgers.
I tried to deep fry the burgers first and they fell apart.
While the burgers are frying; cut the salad, make any side dishes, start toasting the burger buns...or do the washing...
Admire your hard work.
Do a taste test and devour a whole burger (you want to make sure that it's good before serving).
Plate up!
